Shrove Tuesday

Welcome to our first Millstream blog!

For this blog we have teamed up with our head chef, Neil Hiskey. Neil has created a seasonal theme and focussed on Shrove Tuesday (13th February) and shared his own Crepes Suzettes recipe.

Shrove Tuesday is the day in February or March immediately preceding Ash Wednesday. It is traditionally known as the last day of indulgence before the fasting period of Lent. Shrove Tuesday and the tradition of pancakes gives observers the last day of eating richer, fatty foods before the ritual fasting of such foods for 40 days, which begins on Ash Wednesday.

Neil has put together his favourite pancake recipe for you to try at home.

Pancake ingredients

  • 55g melted butter
  • 2 eggs
  • 25g sugar
  • 200g flour
  • 375ml milk
  • Pinch of salt

Method

Mix the warm melted butter with the flour, sugar, salt and eggs. Slowly add the milk and pass.

Sauce ingredients

  • 600ml orange juice
  • Zest of 4 oranges
  • Zest and juice of 2 lemons
  • 4 tablespoons sugar
  • 10 tablespoons Grand Marnier
  • 200g butter

Method

Mix together apart from the butter. Reduce by half and whisk in the butter to thicken the sauce, pass.

Neil’s top tip:

Prepare the sauce first and once the sauce is made, it can be left to one side whilst you cook the pancakes.  Once the pancakes are done, warm up the sauce and pour over a pancake that’s been folded into quarters. Serve with good vanilla ice cream for the prefect finish.
